White grapes
Chardonnay is effectively a neutral grape. It is oak that gives Chardonnay its creamy, buttery, vanilla flavours. Unoaked Chardonnay is a great match for simple fish and chicken dishes. Oaked Chardonnay will have a creamy character, which will be ideal with creamy pasta dishes or rich fish sauces.
Sauvignon Blanc always has a distinctive aromatic grassy or gooseberry type aromas. The New World, New Zealand in particular has now become more famous for "Sauv Blanc" than its homeland of France.
Sauvignon Blanc based wines are actually a great partner for oriental or any spicy dishes which are notoriously tough on wine because of the very strong flavours.
